Ingredients

  • 1 cup (226g) cold unsalted butter, cubed
  • 1 cup (200g) granulated sugar
  • 1/2 cup (110g) light brown sugar, packed
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 3/4 cups (345g) all-purpose flour
  • 1 teaspoon cornstarch
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups (340g) semi-sweet chocolate chips

Instructions

  1. Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.
  2. In a large bowl or stand mixer, cream together cold butter, granulated sugar, and brown sugar for 4 minutes until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In a separate bowl, whisk together flour, cornstarch, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Fold in chocolate chips.
  7. Divide dough into 8 equal portions (about 6 oz each).
  8. Roll each portion into a ball and place on prepared baking sheets, leaving plenty of space between cookies.
  9. Gently press down on each cookie to flatten slightly.
  10. Bake for 11-13 minutes, or until edges are lightly golden but center still looks slightly underbaked.
  11. Let cool on baking sheet for 10 minutes before transferring to a wire rack.

Pro Tips

  • Use COLD butter - this is key for the perfect texture
  • Don't overbake - cookies should look slightly underdone when removed from oven
  • Use a kitchen scale for precise measurements
  • Let dough chill for 30 minutes if it becomes too soft to handle
  • Press additional chocolate chips on top before baking for presentation

Variations

  • Add 1/2 cup chopped nuts for extra crunch
  • Use different chocolate chip varieties (milk, dark, or white chocolate)
  • Add 1/2 teaspoon espresso powder to enhance chocolate flavor
  • Mix in 1 cup M&Ms for a colorful twist

Storage Instructions

  • Store in an airtight container at room temperature for up to 5 days
  • Freeze baked cookies for up to 3 months
  • Freeze cookie dough balls for up to 3 months - bake straight from frozen, adding 1-2 minutes to bake time
